Ingredients
Rosemary Bean Spread
- 1 can Great Northern beans, drained
- 2 tbsp Rosemary, chopped
- 1 clove garlic
- 2 tbsp Balsamic Vinegar
- 1 tbsp Olive Oil
Basil-Lemon Drizzle
- 1/4 cup Plain Yogurt, regular or plant-based
- 1/4 cup Basil
- ½ Lemon, juiced
- Salt and pepper to taste
Veggies
- 2 Garlic cloves
- 1 small Shallot
- 2 cups Kale
- 1 small Zucchini, thinly sliced
- 6-8 Marinated Artichokes
- 1 large or 2 small flatbreads
- 2 flatbreads
Recipe Steps
- Get your oven preheating to a toasty 425°F and lightly oil up your baking tray with your oil of choice. Lay your flatbreads on the tray and set aside.
- Next, whip up the delicious bean spread by combining the beans, 1 garlic clove, rosemary, olive oil, and balsamic vinegar in a food processor and blending until it’s nice and smooth.
- Grab a medium sauté pan and toss in your garlic and shallots. Cook on low heat for about 2 minutes until the shallots have softened up. Now, toss in the kale and cook for an additional 3-4 minutes until it’s wilted down nicely. Season with a sprinkle of salt and pepper to taste.
- Spread a generous amount of the bean spread on the base of each flatbread. Next, add your sautéed kale, zucchini slices, and marinated artichokes to the flatbreads. Bake in the oven for approximately 12 minutes, and then turn on your broiler for the last 1-2 minutes (keep a close eye on it to prevent burning!).
- While your flatbreads cook to perfection, whip up a basil-lemon drizzle by combining yogurt, basil, lemon juice, salt, and pepper in your food processor. Blend until everything is well-combined and smooth.
- Finally, remove your flatbreads from the oven, and drizzle the mouth-watering basil-lemon drizzle over the top. Slice up your flatbreads into manageable pieces, and get ready to dive in and savor every bite!
